This easy cheese oatcakes recipe has just 3 main ingredients and makes a delicious homemade healthy snack for kids!

I've always found that oatcakes are great for kids snacks. They're nutritious, filling and, with very few ingredients, make a lovely whole-food alternative to shop-bought crackers.

This simple oatcakes recipe is fun to make with kids and really tasty. The oats are a great source of carbohydrates, fibre and protein as well as multiple vitamins and minerals, and of course cheese is a great source of calcium and protein for growing kids.

I created this recipe for the Eats Amazing Live Cook-Along sessions that we started last week. In view of the schools being shut and most children in the UK staying at home at the moment, my boys and I are live-filming some super easy recipes in the hope that other children around the UK (and indeed, around the world, if you’re awake at that time!) will join in and cook along with us.

You won't believe how quick and easy these oatcakes are to make - why not make a double batch whilst you're baking, as they won't be around for long!

Easy Cheese Oatcakes

Ingredients (makes 15):

  • 120g oats
  • 50g cheddar cheese
  • 10g butter
  • 1 Tbsp plain flour (for rolling out)

Method:

Preheat oven to 200°C (Gas mark 6/400°F). Line one large or two small baking trays with baking paper.

Weigh the oats and place them in a blender or food processor.

Whizz the oats until they have the consistency of rough flour.

Grate the cheese using a fine grater and place in a bowl along with the oats.

Mix together until well combined.

Place the butter in a small microwave-safe bowl and cook for 15 seconds at a time until melted.

Pour the melted butter into the bowl with the oats and grated cheese and add 75ml of warm water.

Mix well until the mixture comes together in a sticky dough. If it is too crumbly add a little more warm water as needed, a small splash at a time.

Roll out the dough on a floured surface to around the thickness of a £1 coin.

Using cookie cutters in a shape of your choice, cut the dough into individual oatcakes.

Transfer them to the lined tray.

Bake in the pre-heated oven for 12-15 minutes until the edges of the oatcakes are starting to lightly brown.

Remove from the oven and leave oatcakes on the baking tray for a few minutes to cool, before transferring to a wire cooling rack to cool completely.

Once completely cool, store in an airtight container for up to a week.

Note: If you don't have cheddar cheese, you can use another hard cheese in this recipe instead, for example Edam, Gouda, Emmental, Gruyere, red Leicester, hard goats cheese or even Parmesan or Grana Padano cheese.
