All Purpose Flour: gives softer cake when using plain flour. Wheat flour can be used but texture may be little dense.

Raising Agent: baking soda and baking powder should be fresh if it is old it won’t make good cake .

Spices : The most important ingredient in your gingerbread cake is ground ginger. Ginger powder adds intense ginger flavour than freshly grated ginger. Along with ginger, cinnamon and cloves is added.

Brown Sugar – reason for moistness of the cake is using dark brown sugar.

Eggs - helps make soft cake and results in better textured cake.

Honey - traditionally molasses is used, but i like to use honey for the sticky caramelized texture.

Gingerbread cake is served with Vanilla or whipping cream topping.

It also makes for a top-notch swap for molasses. It tastes almost like a mix of malt and caramel, with an even level of sweetness. Like molasses, it comes in a variety of shades. Just note that maple syrup is a lot thinner than molasses, so you might want to use a 3:4 ration in baked goods.

Add an Extra Egg

Most cake mixes call for two to three eggs. Just one more egg will add extra moisture, fat, and a little protein, which means the cake will be softer and less likely to overbake and dry out in the oven.

What makes a cake more moist, oil or butter? ›

If your dough is remarkably dry (this can happen depending on how you measure your flour), add 1 teaspoon of milk at a time until it comes together but is not wet/sticky.

Why has my gingerbread cake cracked? ›

If your oven is too hot, the outside of your cake will bake much more quickly than the inside, leading to a peak or crack. The top of your cake may also get too dark. Oven thermostats can be wildly off, so if this often happens, invest in a separate oven thermometer.

Why is my ginger cake rubbery? ›

Over mixing cake batter can result in a heavy, closed rubbery texture. Over mixing acts on the gluten in flour and will make cakes hard instead of the lovely soft spongy texture we associate with a good cake.

What is the best molasses for gingerbread? ›

Medium Or Dark Molasses

Can I use brown sugar instead of molasses in gingerbread? ›

Brown sugar is actually a combination of granulated sugar and molasses, so it's a good substitute for molasses. While measurements may vary per recipe, you can generally replace 1 cup molasses with 3/4 cup packed brown sugar.

What makes cake rise and moist? ›

Breads, cakes, cookies, and nearly all baked goods require a leavening agent. These are the key ingredients that make a cake rise. There are two types of leavening agents, chemical (baking soda and baking powder) and biological (yeast).

Why do you put water in the oven when baking a cake? ›

It provides moisture.

The steam from the water bath creates a moist environment inside the oven. This is important for delicate bakes like cheesecakes, souffles, terrines, and chiffon cakes. Without added moisture, the surface tends to dry out while the inside is still expanding, which leads to unsightly cracks.
