This recipe calls for dried cranberries, which makes it a long-lasting snack when stored properly. It is easily customizable and if you don’t want to use dark chocolate, use white or milk instead.

How to make chocolate covered cranberries

The whole process is simple and quick. Measure the ingredients. Melt the chocolate chips. I am using a double boiler as I can easily see the state of the chocolate and help it melt quicker by stirring.

If you prefer melting it in a microwave (and have a good experience doing so, then go ahead and use that method).

In this chocolate-covered cranberries recipe, I am using a 1:1 ratio. 1 cup of chocolate chips to 1 cup of dried cranberries. You can slightly increase the number of cranberries, perhaps by 1 or 2 tablespoons more to end up with as little leftover chocolate as possible.

Coating cranberries in chocolate is simple. There is no need to do it one by one. Just combine these two, stir well and you are done.

Spread them all over your baking tray/sheet and separate any clusters. You can use a toothpick to do this or a fork, knife …

They will only need about 15 minutes in the fridge to harden, but you can leave them overnight if you are in no hurry.

Storage

Store them in a Ziploc bag or airtight container in the fridge or freezer. Important: Note that if you want to give these cranberries covered in chocolate as a gift, do not store them in the freezer. They will start sweating once taken out!

Pro tips

  • In a very warm room, the chocolate coating might go softer or starts melting. To avoid this, keep these chocolate-covered cranberries in the fridge until ready to serve.
  • I used dark chocolate chips, but any chocolate will work.
  • Use raisins instead of cranberries!
  • Sprinkle the raisins with desiccated coconut, poppy seeds or sprinkles, if you like.
  • A spider strainer skimmer (see the product below) is the best tool to fish the chocolate cranberries out from melted chocolate, so if you have one, I recommend using it.

Ingredients

  • 1 cup chocolate chips (160 grams), see note 1
  • 1 cup dried cranberries (110 grams), see note 2

Instructions

  1. Melt chocolate chips over a pot of simmering water.
  2. Meanwhile, line a baking sheet with baking parchment. When the chocolate chips are melted, throw cranberries in and stir well to make sure all the pieces are covered in chocolate.

  3. Use a strainer skimmer to fish out the cranberries. Transfer them onto a baking sheet and spread them around, breaking any clusters that might have formed.

  4. When done, place in the fridge for 15 minutes or until the chocolate is set. Take out and break the cranberries into smaller pieces, if needed.

  5. Keep in a Ziploc bag or airtight container in the fridge as the chocolate might start melting slightly when left in a warm room.

Notes

  • I used dark chocolate chips – Callebaut brand nr 811, but you can use any chocolate chips you like.
  • You can use raisins instead of dried cranberries.
  • To make them more festive, sprinkle chocolate cranberries with shredded coconut before putting them in the fridge.
