Apple and Sweet Potato Casserole Delicious Healthy Recipe

Apple and sweet potato casserole dishes are a well loved fixture on Thanksgiving tables across the country. Although many of those are topped with sticky sweet sauces and toasted marshmallows! No marshmallows allowed on our dinner table, we'll save that for dessert. Our much healthier but still delicious sweet potato with apple recipe is the perfect happy medium.

Simple Apple and Sweet Potato Ingredients

It's always a great meal when you start with beautiful fresh produce!

  • Large sweet potato
  • Sweet apples like Gala, Honeycrisp, or Braeburn
  • Apple juice
  • Butter – coconut butter or dairy free alternative
  • Cinnamon
  • Pumpkin pie spice
  • Chopped pecans

OPTIONAL: If it's not sweet enough for you you can add a little coconut sugar or pure maple syrup drizzle over the top before serving!

Prep Sweet Potatoes

Peel sweet potatoes and slice them into 1/4″ rounds, cutting the largest ones in half.

If you're feeling saucy, save those sweet potato peels and try tossing them with a little oil and baking them with cinnamon and sugar for a little extra treat AND no waste! There's a simple recipe for Cinnamon Sugar Sweet Potato Peels here.

Add the Good Stuff

Arrange the sweet potato rounds layers in a casserole dish and sprinkle with spices. Then top with pats of butter.

Slice Apples for Casserole

Now its time to peel and slice your apples. I like to cut my apples into quarters and then thin slice each quarter. Layer the apples into the casserole dish and cover with foil.

Bake Apple and Sweet Potato Casserole

Bake your apple and sweet potatoes for 45 minutes, then remove from oven and stir. Replace the foil {you need it to help the apples and sweet potato to steam} and return to oven for another 15-30 minutes.

Once potatoes are tender it's time to serve. You can choose to serve it this way {above} with sweet potato rounds intact.

OR you can choose to serve it like I do, using a fork to flatten the rounds for a lovely sweet potato mash. Though this isn't a smooth mash as the apples stay together and there will be chunks of sweet potatoes.

However, you can put it in a blender if you have issues with that texture and prefer a smoother finish.

With your apple and sweet potato casserole healthy recipe all finished, I recommend adding chopped pecans that you can crisp up under the broiler for a few minutes.

As mentioned before, you can absolutely sprinkle some sugar or pure maple syrup over the top as well! A little coconut sugar or maple syrup have a lower glycemic index than brown sugar and some nutritional value which makes it a better choice. Although no added sweetener is the best decision for optimal health, sometimes you've got to have a little bit of sweet. Even on the dinner table!

Apple and Sweet Potato Casserole

Delicious and healthy baked apple and sweet potato casserole for your fall gatherings. No marshmallows allowed!

Equipment

  • Casserole dish

  • Foil

Ingredients

  • 1-2 Large sweet potato, to make 2 cups peeled, sliced
  • 1 Large Apple Gala or other sweet variety
  • 1/4 cup Apple juice
  • 2 TB Butter Sub coconut butter for dairy-free
  • 1/2 tsp Cinnamon
  • 1/2 tsp Pumpkin pie spice

Optional toppings

  • 1/2 cup Chopped pecans Sub toasted sunflower seeds for nut-free
  • 2 TB Coconut sugar Sub maple syrup

Instructions

  • Preheat oven to 400°

  • Peel and slice sweet potato into 1/4" rounds and layer into casserole dish

  • Pour apple juice over top

  • Sprinkle evenly with spices

  • Top with butter cut into smaller pieces and dotted around the top

  • Peel, cut, and slice apple and arrange in layer on top of sweet potatoes

  • Cover with foil and bake for 45 minutes at 400°

  • Carefully remove from oven, lift foil away from face, and stir. Check sweet potatoes for doneness.

  • Replace foil and return to oven for 15-30 additional minutes depending on your altitude and oven. Higher altitudes generally require longer cooking time.

  • Check in 15 minute increments until apples and sweet potatoes are soft then remove from oven and mash potatoes with fork or potato masher.

  • Top with optional sweetener and sprinkle with pecans. Broil for a few minutes to crisp pecans and caramelize coconut sugar or maple syrup.

  • Serve hot as a side dish that perfectly complements your turkey and stuffing
